Good looking machine!

I don't see how it would be possible to do a proper "restore" if it was how it was built the day it left the factory.
I thought IH used lead based paint back in the day. I'm pretty sure it would be hard to get things like NOS tires, valve stems, decals and a bunch of other stuff.

None of what you mention is hard to come by, just sayin. (y)

Is 30-40 year old paint any good in the can yet? What does a pair of NOS tires from 1967 cost or that quart of paint you show. I'm not doubting that someone can't source those parts but you would probably have $5k in a machine that is worth about $1k......if your lucky. :)

Yes it's still good, so are the gallon cans I have. Qt's run 100 to 200 and gal. 3 to 500. NOS tires run about 400 a set for the rear and 200 for the fronts. Good thing you you wouldn't doubt it. Believe me, it's ALL still out here and YES people buy it. (y) I did a refurb on my 169 with all new and NOS parts and I had close to 2K in it, dealer cost.

If I'm not mistaken there was a horn option for Cub Cadets and I don't see that on your 122. Although this is a beautiful tractor.
 
As for options, here's the list from the brochure, looks like the only missing "option" is the "rear utility box", the horn, radio, cigar lighter and those type items are considered "accessories":
